Happy New Year!



Hi friends... this is my first posting for 2012. Wow! A brand new year to play around with. Hmmm... what to do... what to do? Find a lost treasure? Discover the cure for the common cold? Walk on fire? Save the world? Decisions... decisions. In April, I will be another year older so maybe for starters, instead of writing out my typical list of new years resolutions, I'll post my bucket list instead. Just so you know, it's not in any particular order and some of it may actually confuse you but anyway, here goes... 

1. See the Northern lights.



2. Spend an entire summer in England.
3. Publish a book. (already on Chapter 16)
4. Get a dog.
5. See the Pyramids in Egypt.



6. Learn how to swim (before number 7).
7. Swim with the dolphins (after number 6).
8. See a broadway show.
9. Go on a cruise.
10. See Niagara Falls (included in 16)



11. Learn to speak french. (before number 12).
12. Go to France (after number 11).
13. Go on an African safari.
14. Meet Oprah Winfrey.
15. Go to the Grand Canyon. (also included in 16)



16. Visit all 50 states.
17. Skate over a frozen lake.
18. Send a message in a bottle.
19. Hire a maid.
20. Ride on a gondola in Venice.


21. Work for myself.
22. Be debt free.
23. Become a vegetarian.
24. Make every day count.

Twilight
























I absolutely love blogging. Funny thing is, I enjoy visiting other people's blogs just as much as the time I spend working on my own. Of course, since I'm always clicking 'next blog,' I realize that my kids weren't right after all; I don't need professional help. Turns out, I'm not the only one that's hooked. I also notice that a lot of people even post daily. Wow! If only you daily blogger's were able to hear the extremely loud pop going off right now! It's the sound of my mind being blown. For me, just thinking of something to post once a month makes my brain hurt. Now that I think about it, part of that may be because I suffer from INKWTDN syndrome, (I never know what to do next)... perhaps some of you have heard of it? Anyway, I end up posting things that I find interesting or funny on a wide range of topics. Basically, it makes thinking of a new topic that much easier because the sky is the limit. With that said... my apologies in advance to the non-Twilight fans.

I'm so excited about going to see the movie. Team Edward!!! I've been looking forward to it for months now just so I can yell out, 'Just go ahead and bite her already!' Also, for your listening enjoyment, I've included a couple of songs from Twilight's soundtrack to my playlist. See how thoughtful I am?

Random thoughts



I just love this picture. I can just sit and watch these leaves blow back and forth from this window all day. You know, for whatever reason, I keep thinking of Christmas. I know it's early but it's right around the corner. I mean what other time of the year do you sit in front of a dead tree and eat candy out of your socks? 

Hey, don't say I never gave you guys any advice. Here's a good way to handle office conflicts. You'll be surprised at the results...LoL.



I'm just kidding. I don't condone violence but I thought this was too funny. Now, I just have to share these weird pictures with you and before you ask... no... I don't have a pair in my closet.

Morning Glory Muffins

Hello again. You know, rainy days always make me want to bake something yummy. I was in the mood for some morning glory muffins. I found this recipe from Better Homes and Gardens years ago and it's become one of my favorite muffin recipes. The first time I made them, I wasn't sure if the children would try them because of all the carrots and apples in the recipe but I was wrong. The muffins turned out to be so good and sweet. Once the family realized how delicious they were, they didn't last long at all. Hint, hint... This is also a really great way to sneak in extra fruits and vegetables for picky eaters.

Morning Glory Muffins















 Morning Glory Muffins

2 cups of all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 1/4 cups packed brown sugar
2 medium apples, peeled, cored, and chopped
1 1/4 cups finely shredded carrots
1/2 cup raisins
1 8-ounce can crushed pineapple (juice pack)
undrained
2/3 cup cooking oil
3 eggs
1/2 teapoon vanilla

Directions:

Line twenty four 2 1/2 inch muffin cups with paper bake cups; set aside.

In a large bowl combine flour, baking soda, cinnamon and salt; stir in
brown sugar. Stir in apples, carrots, and raisins. In In a medium bowl
combine undrained pineapple, oil, eggs and vanilla. Add pineapple
mixture to flour mixture; stir just until moistened.

Spoon batter into prepared muffin cups. Bake in a 375 degree oven
about 18 minutes or until a wooden tothpick inserted in centers comes
out clean. Cool in muffin cups on wire rack for 5 minutes. Remove from
muffin cups; serve warm.

Makes 24 muffins. Enjoy...
